Cheezy Lemon Parmesan Air Fried Broccolini
Anyone else like broccolini aka baby broccoli more than regular broccoli? I love the leaves more for some reason and these are the best roasted. I used to bake these on a cookie sheet, but now I air fry these babies in just minutes. I did include the baking instructions too in case you don’t have an air fryer.
You can easily drop the oil if you want to do oil free, and just add more lemon juice. Either are just as awesome. These make the perfect quick addition to any meal, including pasta dishes. I paired these with the breaded tofu I made with falafel mix which you can find here. I also made Rice Rine Dovi (peanut butter rice) which you can find here. Even though all these recipes can easily be paired with other things or stand alone, I think they are a great meal together. I’ll definitely be making this meal again in the future.

Cheezy Lemon Parmesan Air Fried Broccolini
Ingredients
- 16 ounces Broccolini (baby broccoli)
- 2 TBSP Lemon juice (more for garnish)
- 1 ½-2 TBSP Olive oil or vegan ghee
- 1 ½-2 TBSP Nutritional yeast
- ½-¾ TBSP Garlic powder
- 2 TSP Trader Joe’s Onion Salt
- 2 TSP TJ’s Green Goddess seasoning
- 2-3 TBSP Vegan parmesan for garnish (I love to grate the block of Violife’s parm. TJ’s shredded vegan parm is also good)
- 1 TBSP Hemp seeds for garnish (optional)
Instructions
- If baking and not air frying, preheat oven to 400 degrees Fahrenheit.
- Rinse broccolini and cut ends off, about an inch.
- Toss broccolini in oil or melted vegan ghee and coat evenly.
- Add remaining seasoning and again, toss to coat evenly.
- Lay out on baking sheet or in air fryer and give each one some room.
- Roast in oven for 15-20 minutes, or until leaves are crispy and stocks are cooked through. Toss halfway.
- Air fry at 370 degrees for 10-12 minutes, tossing halfway.
- Garnish with a squeeze of lemon juice and the vegan parmesan.
- Sprinkle hemp seeds on for an added crunch (optional)
- Serve immediately and keep leftovers in fridge for 3-5 days in sealed container.
Notes:
Cook time is just an estimate. I would cook them 3-4 hours, but they will be okay at around 1 ½ -2 hours if you are cut for time. As long as the bitterness is cooked out and they are soft, you are good.
