Stuffed Dino Kale Boats
Kale. It can be overpowering on its own, and many avoid it purely based off its reputation. I used to be one of those people until I because vegan and found Dino kale. Also called Lacinato or Tuscan kale, it is full of vitamins and nutrients but isn’t as tough to eat raw. There is something about the texture with Dino kale that makes it easy for me to eat this raw, in smoothies, or cooked in meals. I find it is easy to eat if I finely shred the kale to keep it from overtaking whatever you put it in.
For this meal below, you can mix and match the ingredients, but I find the combination I use to be filling, nutrient dense, and super easy to make. I normally make this with diced tomato too, but I was out this time, so I went without. It was still amazing. My go-to sauerkraut is the Whiskey Dill kraut from Cleveland Kraut, but any of their krauts are legit. Stuffed Dino Kale Boats
Ingredients
- 3-5 Dino kale leaves depending on size.
- 1 medium avocado
- 2-3 TBSP Kraut of your choice (I prefer Whiskey Dill Kraut by Cleveland Kraut)
- 1 TBSP Hempseeds
- 1 TBSP Lemon juice
- 2 TBPS Sprouts or microgreens of your choice (I like broccoli spouts)
- 2 TBSP diced cucumber
- 1-2 TBSP diced onion (more or less based on preference)
- 1 TSP Everything but the Bagel seasoning (more for garnish)
- Fresh basil to garnish
Instructions
- Most Dino kale is already cut for you, but if not pull apart the leaves you want and wash them. Pat dry. In a bowl, mash avocado then add the kraut, hempseeds, lemon juice, sprouts, and EBTB seasoning. Adjust seasoning to taste. Mix well. Spoon equal amounts of “guac” mix into each of the kale leaves. Top with diced onion, cucumber, basil, and a dash of EBTB seasoning. Diced Tomato is also great with this if you have some.
